This recipe from entertaining expert Cheryl Najafi takes the familiar tomato, mozzarella and basil on a stick and adds a new element; but doesn't take you down a rabbit hole of prep work. The supersimple addition is just toasted mini pitas (Thomas' makes them, as does Trader Joe's); they add heft, crunch and an undeniable cuteness factor. You place a piece of tomato, mozzarella and basil in each pita and secure the micro-sandwich with a skewer.

Serves 12 to 16

Ingredients

  • 2 packages small pita bread (16 pitas)
  • 1 Tbsp. olive oil
  • 1 (12-ounce) container small, fresh mozzarella balls, sliced in half
  • 1 (16-ounce) container orange-cherry tomatoes, sliced in half
  • Handful of fresh basil leaves, stems removed
  • 16 bamboo skewers
  • Salt and pepper to taste

Directions


Brush pita bread with olive oil. Place in oven or toaster oven, lightly toast a few minutes to warm (if you overcook it, the bread will break). Place cherry tomatoes, mozzarella and basil in mixing bowl. Drizzle with olive oil. Season with salt and pepper to taste, toss to combine.

Assemble pita skewers: Place 1 leaf of basil, 1 tomato half and 1 mozzarella half in each pita. Carefully fold over pita and press bamboo skewer through to secure in place. Repeat until all skewers are assembled.
